Acha is one of the most nutritious grains in the world! It makes a great porridge. Here is a recipe that we have worked out, it serves 3 people.
Soak 2/3 cup acha with 1/2 cup buttermilk and 2 ½ cups water overnight, add a dash of cinammon or other spice if you like.
In the morning, cook it over a slow heat for about 4 minutes, stirring so it doesn’t stick. Serve with buttermilk and chopped bananas.
