Making a sourdough starter

This will take 5 days to establish. It’s really easy and just takes a minute or so of work each day.

Day 1

Combine 1 1/2 cup whole wheat flour and 3/4 cup cold water in a widemouth quart glass jar. Cover with a piece of cloth and secure with a the ring part of a 2-part lid, or tie a string/elastic around it to secure. Leave at room temperature for 24 hours.

Day 2

Stir the starter from the previous day. Remove 3/4 cup and put it into a bowl. Add 1 1/2 cup of wholewheat flour and 3/4 cup of filtered water. Mix and put in a clean quart widemouth jar, and cover as before. Discard the remainder of the starter, use it to make sourdough pancakes or feed it to your chickens!

Days 3,4 and 5

Repeat the instructions from Day 2.

You will see the starter gradually growing bubbly and bigger to reach the top of the jar.  It is ready for use.
